Nanshu Kurobuta

A pure black pork raised on satsumaimo — carrying within it the deep, nourishing essence of the Osumi Peninsula.

Nanshu Kurobuta (Nanshu Black Pig) is a black pig brand nurtured in the rich natural environment of Nanshu Farm spreading across the Osumi Peninsula of Kagoshima Prefecture. Pure Berkshire breeding pigs registered in Kagoshima Prefecture are used — the purity of lineage is thoroughly protected continuously. The rearing period is approximately 230 days — longer than white pig — by raising slowly and carefully over time, deep umami is firmly concentrated within the meat. Clear spring water welling from the laurel forest spreading around the farm is used as drinking water — pig barn movements are also minimized to minimize pig stress — a rearing environment with consideration for animal welfare is in place. A major characteristic of the feed is blending 10–20% sweet potato (kansho) from approximately 60 days before shipping. Sweet potato is richly containing sugar — by this, the fat is non-greasy and finishes with a clean, elegant flavor. Furthermore, by adding wheat — a white, beautiful luster is born in the fat. The meat quality of Nanshu Kurobuta has fine lean muscle fibers — combining appropriate texture and deep umami. Richly containing umami components such as glutamic acid and carnosine — a premium flavor with outstanding sweetness and umami, free of off-flavors. Particularly delicious in preparations making use of the ingredient’s character such as shabu-shabu and tonkatsu. The commitment system of consistently self-managing from production through processing, processing, and sales supports the high quality. Both Farm HACCP and JGAP certifications obtained — high consciousness toward safe, reliable production is also evaluated.
