Japan compound feed and cooperative feed are used from the suckling period through to 110 days of age, after which the pigs are switched to an original feed incorporating dairy-derived components, raising them slowly to a shipping age of 195–210 days. The commitment to the rearing environment is equally notable. Sows are given access to pasture after giving birth to minimize physical and mental stress, and background music is played in the barns — all to draw out the best qualities of the pigs in a calm, gentle setting. The result is a pork of mild, mellow flavor with minimal gaminess, said to release a subtle, elegant milk-like fragrance when heated.
