Koshu Nyusankinton Crystal Pork is a committed four-breed cross pork raised at ‘Chino Farm,’ spread across the hilly area of southern Kofu City, Yamanashi Prefecture. The name carries two meanings: the history of Kofu long known as a ‘crystal production area,’ and a strong commitment to lactic acid bacteria rearing. The defining feature is the proprietary rearing method of blending lactic acid bacteria into a feed centered on rolled barley. Lactic acid bacteria regulate the gut environment of the pigs and suppress the growth of pathogenic bacteria — enabling the raising of healthy pigs. As a result, safe, reliable pork production with the use of hormones and antibiotics suppressed to the absolute minimum is realized. The breed is a four-breed cross — Landrace (L) and Large Yorkshire (W) females crossed with Berkshire (B) and Duroc (D) males. Inheriting the productivity, meat productivity, and meat quality of each breed in good balance — only individuals with a back fat thickness of 1 cm or more are certified with the ‘Crystal Pork’ brand. The meat quality is finely-grained and soft in texture — a defining appeal. The fat has no gaminess with a clean sweetness, and while the umami is firm, the finish is light. Even when cooled, the flavor does not diminish — welcomed as a lunchbox side dish as well. It demonstrates its capabilities in a wide range of preparations including shabu-shabu, sauté, and ginger pork stir-fry — in shabu-shabu particularly, the umami of the clear fat can be savored straight. Trademark registration obtained in 2010, and also certified as ‘Kofu Proof Brand Certified Agricultural and Forestry Products’ in 2020 — a pride of Kofu, specialty pork.
