Kirishima Kurobuta (Kirishima Black Pig) is a 100% Berkshire breed brand black pig raised at Anku Farm and Oike Farm in Miyakonojo City, Miyazaki Prefecture. Production is handled by Kirishima Dream Farm Co., Ltd. of the Hayashikane Sangyo Group — known as Japan’s largest black pig specialist farm — boasting a large-scale production system of shipping 50,000 head of Kirishima Kurobuta annually. The Berkshire breed takes more time to grow than white pig breeds and has fewer litter sizes — but the meat quality is correspondingly exceptional. So called ‘mochi-niku’ (springy meat) from the unique taut texture born from finer muscle fibers than other breeds — the springy mouthfeel leaves a strong impression on those who eat it. Carnosine — a type of amino acid contained in skeletal muscle — produces rich sweetness — the fat is premium quality, white and beautiful, richly containing saturated fatty acids. A dedicated black pig feed independently developed by Hayashikane Sangyo through years of research is used for the feed. By using 8 stages of feed according to the pig’s growth stage — consistently producing high-quality meat with high uniformity. The farm’s location of Miyakonojo City near the Kagoshima border — in the rich natural environment of the Kirishima mountain foothills — at Anku Farm, the pigs are slowly raised in clear air surrounded by mountains spreading on the south slope of the basin. The longer rearing period of 230–240 days than standard pigs is a major secret producing the concentrated flavor and deep umami unique to this pig. Farm HACCP and JGAP also obtained — maintaining a high standard in food safety management as well.
